Who says you need beads to get a taste of New Orleans culture? Andouille sausage is a New Orleans staple, and ours is based off a famous recipe that was passed down from a New Orleans chef. These links are seasoned with cumin, cayenne, paprika, and ancho chili pepper, along with the addition of milk powder to give them a great texture. After hand-twisting the links, we smoke them over local cherry wood to give the flavor an extra depth that makes them perfect for gumbo.
Our sausages are made with carefully selected trim from the entire hog. We only put lean meat and back fat into our sausages, making sure to trim out all the undesirable bits (ahem, unlike some other links out there). We season our Andouille with a custom blend of milk powder, white pepper, cumin, ancho chili powder, cayenne, and fresh scallion. All of our sausages are made with natural casings, which give the final products a snappy bite. Ingredients: Pork, salt, pink salt, white pepper, cumin, ancho chili powder, cayenne, paprika, milk powder, water, pork casing.
This sausage is perfect for any of your cajun cooking. Dice it up and add it to stews, gumbos, étouffée, greens, beans… anything that you want to add a bit of a kick to.
