The Lamb Chop is part of the Rack of Lamb, which comes from the loin. The loin is at the top of the animal’s back, near the head.
The easiest way to to cook this beautiful cut is to simply season with salt and pepper, then grill over high heat until you reach an internal temperature of 145 degrees. If you have a bit of a sweet tooth, top them with a little peach jam before removing from the grill. Always allow the meat to rest before serving.
