On New Year's Eve, people across Italy enjoy Cotechino with Lentils, to signify riches in the year to come. Featuring wintery spices, and rich pork skin, these links will remind you that winter isn't so bad after all. Italians are definitely on to something.
Our sausages are made with carefully selected trim from the entire hog. We only put lean meat and back fat into our sausages, making sure to trim out all the undesirable bits (ahem, unlike some other links out there). This sausage stands out thanks to the addition of rich pork skin, and wintery spices. Ingredients: Pork, pork skin, salt, black pepper, coriander, cloves, cayenne, allspice, sugar, nutmeg, pork casings.
Check out our recipes to learn how to make Cotechino with Lentils, the traditional Italian dish featuring these links. For that recipe, we suggest cooking the Cotechino in your oven, but you can also grill or sear them (just make sure to start off direct heat to prevent splitting).
