Uncured Pork Belly
Though it’s been a restaurant favorite for years, getting Uncured Pork Belly has proven to be a challenge for many home cooks. Use this rich, pasture-raised port to elevate your ramen, braised belly, porchetta, pancetta, and homemade bacon.
(Note that this product does not include the skin.)
This cut is from the belly of the animal and is the same cut used to make the bacon you know and love.
For crispy pork belly, we suggest seasoning with a mixture of equal parts salt and sugar, and a few grinds of pepper. Let it sit overnight before roasting. Roast for 30 minutes at 500°, then lower the temperature to 350° and cook for another hour.
