This is exactly what it sounds like - the heart of a chicken. The heart is a very hard working muscle. This makes a very flavorful, minerally, lean cut of meat, with a bit of a crunch from the ventricles.

Chicken heart is excellent when marinated and then charred over a grill, yakitori style, with a nice sticky sweet glaze to help balance the mineral flavors of the cut.
