The Pork Tomahawk is a bone in pork chop cut from the shoulder side of the loin with a long, frenched bone. This cut is tender, with an incredible taste to match. Our hogs live out in the woods and use their muscles, which in turn gives the meat a deeper pink hue and a superior flavor profile.

The Pork Bone-In Tomahawk Chop is located at the top back part of the pig, referred to as the loin. It comes from the back half, below the rib cage, which is the most tender section. We leave a nice fat cap on top. Start by rendering the fat cap to make the best Pork Chop you've ever had. The Pork Bone-In Tomahawk Chop comes from the shoulder end of the loin, with a large rib bone left intact. This is a cut with the incredible flavor and tenderness, the fat helps create a moist delicious chop, and the bone makes it look freaking cool.

Cooking Notes
We love this cut on the grill. Set up a two zone grill, with heat on one side and no heat on the other. Pat the chop dry, then season with salt or your favorite rub. Grill on both sides over high heat until you get a good char, then switch to the cool side of your grill and close the lid. Roast until your chop almost reaches 135 F, then char again to create a nice crust. Pro-tip: make sure to char the sides and fat cap! Pull at 145 F, rest and enjoy!
