Give them a quick sear on the grill, throw them in the crockpot with heaps of bbq sauce, and pull one out whenever you’re ready for a sandwich. Pairs well with Cardinals baseball and cheap beer. St. Louis Pork Steaks are a lesser known cut that packs a ton of great flavor. We cut our St. Louis pork steaks from the butt aka the top half of the shoulder of a hog. We take our pork butts and slice them on the saw to be 1" thick. We then cut them down to a perfect serving size of 8 ounces. We leave the shoulder blade bone in to maximize the flavor.

Generously season this steaks with salt and pepper then grill for about 10 minutes, flipping halfway through. Put them in a pan over medium heat and add a mixture of equal parts beer and barbecue sauce until submerged. Cook for at least two hours. These pork steaks can’t be overcooked, so make a big batch and keep it warm to snack on all day.
