Cut from the brisket, this stew meat made to be cooked all day long without falling apart, so get started early for a dinner that will knock your socks off. Our Stew Meat is made up of perfectly trimmed morsels from the brisket — the famed low-and-slow smoking cut, with it's delicious meat to fat ratio and dry aged flavor. This area is naturally flavorful but tough, ideal for all day cooking.

Toss in a little bit of flour then sear all sides of each piece over high (do it in batches to avoid crowding) before adding homemade stock, vegetables, and fresh herbs. Cook it low and slow for a thick and tender stew.
