For crispy pork belly, we suggest seasoning with a mixture of equal parts salt and sugar, and a few grinds of pepper. Let it sit overnight in the refrigerator before roasting. Roast for 30 minutes at 500°, then lower the temperature to 350° and cook for another hour.
