Italian Cotechino and Lentils

Traditionally served on New Years Eve, this hearty dish is a great, simple recipe for any night of the week!

Italians know that there's no better way to start the new year than with flavorful sausage. This classic dish features hearty Cotechino, a pork sausage made with wintery spices and rich pork skin, on top of a warm lentil salad — which signifies riches in the year to come. Top with a bright salad for an epic meal that will leave you satisfied and feeling great, even if your New Years Eve is champagne-filled.

Italian Cotechino and Lentils

Serves 4

Ingredients

1 Tbsp Grapeseed or Vegetable Oil

1 Small Onion, Diced

1 Medium Carrot, Diced

4 Cloves of Garlic, Minced

1 tsp Fresh Thyme

1 Cup Green Lentils, Rinsed

2 Cups Pork or Chicken Stock

2 lbs Cotechino Links

Directions

Step 1

Pre-heat oven to 350°

Step 2 

In a medium pot, heat the oil over high heat. Sauté the onion and carrot for two minutes, then add garlic and cook for an additional minute. Add stock, thyme, and lentils.

Step 3

Reduce heat to low and cover the pot with a lid. Cook for 5 minutes, turn off the heat, and let sit for an additional 20 minutes with the lid in place. 

Step 4

Place Cotechino on a baking sheet with a lip, and roast for 15 minutes, or until golden brown. 

Step 5 

Scoop 1/2 cup of cooked lentils into a shallow bowl, and top with a Cotechino link. If desired, finish with a light fennel salad, parsley, and/or a squeeze of fresh lemon juice.
