Who says you need beads to get a taste of New Orleans culture? The andouille sausage is a New Orleans staple, and ours is based off a famous recipe passed down to us and seasoned with cumin, cayenne, paprika, and ancho chile pepper. We smoke it over cherry wood, add milk powder to give it a great texture and a creamy flavor; but no fillers or flavor additives. The best part —since our pigs have the freedom and opportunity to use their muscles in the woods, the meat develops a deep, incredible taste.
Our sausages are made with carefully selected trim from the entire hog. We only put lean meat and back fat into our sausages, making sure to trim out all the undesirable bits (ahem, unlike some other links out there). We season them with a custom blend of herbs, spices, and fresh ingredients to give it great course texture and deep flavor. Like all our sausages we use a natural casing to finish off each crisp, hearty bite.
