Ham comes from the haunches of the pig. These muscles get a great workout, which means they have a lot of flavor, but can be tough if not prepared properly. That’s why our hams are brined and cooked low and slow, leading to an exceptionally tender finished product.

To glaze your ham, combine 1 cup of Dijon mustard with 1⁄2 cup of brown sugar and 1⁄2 cup honey. Pack the mixture onto your ham prior to roasting. To heat, place ham in a roasting pan with rack and add 2 cups of water. Roast at 250°F for 90 minutes, basting every 30 minutes, then increase the temperature to 350°F and continue to cook until the internal temperature reaches 145°F, about an hour for a whole ham and 45 minutes for half. Remove from the oven and allow to rest for 10 minutes.
